To a lot of game designers, the ideal game is Go. Go has simple rules that are quick to explain and easy to grasp, but they give rise to some of the most complex strategic considerations in any game ever designed. Go embodies the paradigm "easy to learn, hard to master". When you hear people talk about accessibility, that's what they're aiming for. Unfortunately it's pretty difficult to get right.
Personally I prefer a design paradigm that can be summarised as "everything and the kitchen sink and a bag of chips".
